The flavor of ginger (luya) and chili leaves makes the soup soothing and warming. Tinola is very easy to cook and need only few ingredients. In tinola we usually use green papaya but you can also substitute chayote squash (sayote). While chili pepper leaves (dahon ng sili) can be replaced by malunggay (moringa) or spinach. Tinolang Manok Recipe Ingredients 9 pcs. Chicken drumsticks 1 chayote (sayote), cut into wedges 1 bundle of chili pepper leaves (dahon ng sili) 1 onions, slice 3 cloves garlic, minced 2 thumb sized ginger, julienned 6 cups water Chicken cubes (optional) 1-2 tbsp fish sauce (patis) Ground black pepper Procedure 1. Saute onions, garlic and ginger until until fragrant. Add chicken and cook stirring occasionally until it change its color. Add fish sauce (patis), stir for 2 minutes. 2. Add water and bring to a boil. Then lower heat, add chicken cubes(optional) and cover. Simmer until chicken is somewhat done. Add in chayote (sayote). Simmer until tender. Add chili leaves and ground black pepper. Cook chili leaves until just wilted. 3. Serve hot. ENJOY!
