Stovies is a traditional Scottish dish that is often made on a Monday with leftovers from a weekend roast. I’ve created a Stovies recipe, with a twist, using sweet potatoes in place of the traditional white potato and I’ve added a few other added ingredients to make it a delicious, high protein winner.
